If you want to know about the provenance of the cheese on sale in this specialist store in the heart of the city, just ask the team, who travel out to local farms to pick many of them up.
Cow, goat and ewe varieties, offered in pasteurised, unpasteurised and vegetarian forms, are stored in a cellar at the rear of the shop.
Try a slice from Appleby's handmade, cloth-bound truckles of crumbly Cheshire cheese.
There are international varieites to taste too, including honeyed Manchego, made from the milk of sheep reared in La Mancha in Spain.
But the team at The Cheese Shop don't take cheese too serioulsy here - they are members of the Chester cheese-rolling team!
