Homemade Pot Noodle #Recipe

Quick easy and low fat and dinner or lunch kids big and small.You can have all the ingredients ready to go, or even use jar or tube garlic and ginger for ease and convenience and one pan cooking. This is a great one to get the kids involved, and an easy one for them to learn.

Note; all ingredients can be prepared in advance and stored in the fridge making this a super quick and easy dish.

Cut chicken in to bite size pieces and set aside, or you can uses pre-cooked chicken; just add it at the end

I use pre-cooked noodles so you just pop them in at the end but if not  Cook the noodles now according to the packet instructions

Drain and set aside.

Put  some oil in the wok or large frying pan and heat. Add a teaspoon of chopped ginger and chopped garlic for a few seconds then add chicken (if using raw meat) and cook, add some soy sauce and a few chopped spring onions and cook through till chicken is not pink

Then add stock, peas, sweetcorn  in a pan over a medium heat.

Simmer and cook for 2 minutes.(If using pre-cooked chicken add this now)

Mix the cornflour with 2 tsp of cold water in a bowl and add to the contents of the pan then cook, keep stirring, for a further minute or so until the liquid thickens slightly. Add more soy sauce to taste.

Now add the noodles and heat through , stirring. Finish with chopped spring onions

Add more soy sauce to taste if you wish

Enjoy you will make it again.

Ingredients

300g straight wok noodles pre cooked
100 g chicken cut in to bite size pieces (you can use pre cooked )
1tsp chopped garlic
1tsp chopped ginger
125 ml chicken stock
2 tsp dark soy sauce
50 g frozen peas
40 g drained canned or frozen sweetcorn
1/2 tsp cornflour
Chopped spring onions
Extra soy sauce if needed
